A cooling, digestive herb and spice, especially loved for calming Pitta — seeds and fresh leaves both have a place.

Coriander supports digestion without adding heat, which makes it one of the best spices for Pitta. Both the seeds and fresh leaves (cilantro) are used.

How to use it
- Fresh leaves stirred into dals, curries and salads
- Coriander seed water: soak 1 tsp crushed seeds overnight, strain and drink
- Part of CCF tea with cumin and fennel
- Coriander chutney with mint and lime
